So the great British summer has finally arrived! The weather’s been fantastic for the last few days, so let’s hope it lasts. I must confess though it’s been a bit too hot for me at times (would be different if I had a pool to jump in!) and while I was browsing the internet (as you do) I found this easy recipe from Jamie Oliver for ginger beer!! Not just any old ginger beer, but EASY PEASY GINGER BEER. And anything easy peasy is just up my street so I thought I’d give it a go.
And it really was quite easy. Basically you just need to get a big chunk of fresh ginger (the recipe says 140g but it had a BIG kick so I’ll use a bit less next time), 2-3 lemons, muscovado sugar and some sparkling mineral water and a bit of mint (I forgot that bit).
Grate the ginger into a bowl, add the sugar, peel the lemons using a vegetable peeler and add the peel to the bowl, bash it up a bit, add the sparkling water and leave for 10 minutes or so. Then you just strain it through a sieve into a jug and voila! LUSH!
